In Hanoi he grapples with the ferocious Madam Duck and begs her to reveal her secret duck recipe. He also rises to the challenge of broth maker Zi Hai to sell over 80 broths in a tiny boat at a floating market in the Mekong Delta. 

Gordon travels hundreds of miles to the tropical hot spot Mai Chau to learn how to prepare rice cakes. 

Gordon’s final challenge is to host a dinner of pork for several of Vietnam’s most discerning and critical food connoisseurs.

2-3 onions, 7-8 pieces of ginger, 8 pounds of ox bones knuckle, rice noodle, 2 beef brisket thinly sliced, 2 beef shank thinly sliced, rib eye or sirloin steak thinly sliced, 2 packages of beef meat balls, 3-4 cinnamon sticks, 2-3 tbs of coriander seeds, 2 tbs of fennel seeds, 7 star anise, 7 cloves 2 cardamom pod, 3 tbs of salt, 1 cup of brown sugar, 1 cup of fish sauce, 16 quarts of water, mint, cilantro, basil, beansprouts, fresh chilies, limes. Vietnamese Meatball Sandwich Recipe – Bánh Mì Xíu Mại    6 minutes

Ingredients

200g jicama, peeled and julienned
500g minced pork (1.1 lb)
1 tsp minced garlic
1 tsp minced shallot, or white-part spring onion
salt, pepper, chicken stock, sugar to taste
1 egg
1 tbsp tapioca/corn starch
1 tbsp cooking oil
1 tbsp minced garlic
1 tbsp minced shallot, or white-part spring onion
3 medium tomatoes, diced (400g)
1 tbsp sugar
1 tbsp chicken/pork stock
3 tbsp fish sauce
3 tbsp ketchup

Directions: 
– Cook the julienned jicama with 2 cups water for 5 minutes. Drain, squeeze out the excess water and chop finely. 
– In a large mixing bowl, mix together the minced pork, jicama, egg and tapioca/corn starch. Season with salt, pepper, chicken stock, sugar (about 1/2 tsp each). Set aside for 15 minutes. Scoop 1 tbsp of the meat mixture and form into a meatball. Repeat until finish. You will get about 15 meatballs.
– Steam the meatballs for about 10 minutes. (This step is optional)
– In a saucepan or a wok, heat 1 tbsp cooking oil and fry the minced garlic and shallot until fragrant. Then add the diced tomatoes, sugar, chicken stock, fish sauce and ketchup. Simmer on low for 10 minutes. You can add 1/2 cup water if you want more sauce. 
– Remove the meatballs from the steamer and transfer to combine with the tomato sauce. Simmer for 5 more minutes and transfer to a plate to serve.
– Garnish with cilantro, thinly sliced onion, crispy fried shallot and serve with a baguette. To make meatball sandwich, slice the baguette halfway to open, spread chili sauce, put a meatball inside and use a spoon to break it into chunks. Add more cilantro, spring onion, sliced pepperoni/jalapeno to your preference.

180ml (3/4 cup) lukewarm water (at 40-46°C or 105-115°F) 
250g (2 cups) all-purpose flour (low-protein, unbleached)**
1 tsp salt
1 tbsp sugar (optional)

** I live in Germany and here they don’t sell the equivalent of bread flour in the US. So I made this recipe with all-purpose flour. But you are free to try it with bread flour. I guess bread flour will generate better results^^
